Chocolate Banana Cake with Walnuts

  • 1 cup whole-wheat flour
  • 1 cup unbleached all-purpose flour
  • 1/4 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 4 large overly ripe bananas, mashed
  • 1/2 cup lowfat plain yogurt
  • 2 egg whites
  • 2 tsp vanilla extract
  • 3/4 cup walnuts, chopped

Heat over to 350 degrees. Mix flours, sugar, cocoa and baking soda in a bowl. Add bananas, yogurt, egg whites, vanilla and 1/2 cup walnuts. Coat a 9 x 13 cake pan with cooking spray, pour in batter and bake 35 minutes or until knife inserted in center comes out clean.
