Salmon Salad witih grapefruit-ginger dressing

Salmon

  • 1lb salmon filet (wild salmon)
  • cumin
  • black pepper
  • 1/2 lime
  • 1 avacado
  • 1 pink grapefruit
  • baby greens

Dressing

  • 1 tbsp chopped fresh ginger
  • 5 tbsp grapefruit juice
  • 1/4 cup white wine vinegar
  • 2 tbsp olive oil

Put cumin, lime juice and black pepper onto salmon filet. Rub into salmon. Bake salmon in oven for 25min or until flakey. Place greens on plate, grapefruit pieces in middle and avacado pieces around that. Place salmon on top and then add dressing.
